    Compared to other cereals, spelled has a lower calorie intake. In fact, spelled provides only 335 Kcal per 100 grams. Spelled flour is rich in proteins, B vitamins and it is important as it also contains the methionine, an essential amino acid, involved in the synthesis of carnitine, cysteine and other phospholipids. The nutritional value of this flour is high. Spelled flour is mainly used for the production of pasta and bread. The diet based on products derived from spelled is particularly suitable for those who do not digest bread, pasta or other products consisting of hard or soft wheat, but not for i celiacs. Spelled flour has a high fiber content which, together with its remarkable ability to absorb water, makes it a food satiating and slightly laxative.
