This particular type of flour is obtained from grinding of pea seeds previously dried. It's a protein-rich flour, starch, fiber, mineral salts, vitamins, antioxidants. In short, it has the same precious properties as peas with the advantage of being able to use it in many other ways than the recipes in which we use these legumes, such as for crepes, farinata, fresh pasta or vegetarian meatballs. It is also rich protein, football, potassium, iron and phosphorus, as well as di insoluble fiber and soluble, including two probiotics, inulin and pectin (partly fermented by the bacterial flora with the production of important fatty acids, propionic and buttyric). Among the vitamins stand out B1, B2, B3 and TO.
As for other legume flours (or gluten-free cereals), too that of peas can be used between 5 and 30% compared to the main gluten. It is advisable to use it with a flour particularly rich in gluten, such as one Manitoba, or one type 0 Reinforced
