Aztecs toasted the seeds of the cocoa plant on a curved stone called "metate", which was heated. The seeds were then ground with a stone rolling pin. The cocoa pasta obtained was flavored with spices (vanilla, red pepper, cinnamon and many other aromas and local herbs and even exotic flowers); The mixture was then rubbed on the "metate" until it became a hard and homogeneous dough.
