Compared to other grains, spelt has a calorie intake lower. The farro makes in fact only 335 Kcal per 100 grams. Spelt flour is rich in proteins, vitamins of the B group and is important because it also contains methionine, an essential amino acid, involved in the synthesis of carnitine, cysteine, and other phospholipids. The nutritional value of this flour is high. Spelt flour is mainly used for the production of pasta and bread. The power-based products derived from spelt is particularly suitable for those who do not digest bread, pasta or other products made from hard wheat or soft, but not for the celiac . The spelt flour has a high content of fibres, which, together with its considerable capacity to absorb water, makes it a food satiating and slightly laxative.
