The flour of sorghum, the flavor is delicate, can be used for the preparation of baked products sweet and savoury, or in addition to other flours containing gluten. Or in combination with starches, or starches, to improve the consistency of the final product.
It is ideal for mixes, cakes, doughnuts, biscuits, pancakes, bread and savoury products in general.
In addition to being a good source of energy in our food supply (cereals in general should constitute at least 60% of the nutritional intake daily with about 330 kcal per 100 g of food), the main component of cereals (and of pseudocereali, such as quinoa, amaranth, and buckwheat) are complex carbohydrates, which are transformed, little by little, during the process of metabolism, molecules of glucose, the most simple, useful to release energy, but at the same time useful not to determine a rise sharp of the values of glucose in the blood (glycemic peak). Sorghum also contains no elements of biotechnology that make an organism transgenic or genetically modified.
