Millet is the best cereal after amaranth, contains an abundant amount of iron and to a lesser extent: magnesium, silicon and phosphorus.
It also contains thesalicic acid, which has a beneficial effect on tooth enamel, hair, nails and skin.

How to use:
It is used in a mixture with wheat flour from 15 to 30% in the preparation of sweet and savory baked goods.
